Preheat broiler. Heat about 1 tbsp of EVOO in ovenproof pan/skillet. Add shrimp (deveined, cooked, tail-less), 3 minced garlic cloves, Creole Seasoning, & Black pepper to pan, sautee about 2-3 minutes. Add 1/2 cup 99% fat free, reduced sodium chicken broth, chopped scallions and fresh parsley to skillet. Stir and bring to a boil. Add a squeeze of lemon juice. Reduce heat to simmer, add a sprinkling of bread crumbs (about 1/8 cup). Place skillet in oven and broil for about 2 minutes. Steam rice and chopped spinach. Serve garlic over rice mixture. Enjoy!
